In Sicily, granita is both sacred and ubiquitous according to Paolo Gatto, owner of the newly opened Pari Pasticceria in Concord. “In the corner of every bar in Sicily, they have granita,” he says.
In Italy, the flavoured ice-crystal dish is an all-day thing. In the morning, Sicilians eat granita café con panna (coffee granita with thick cream) and brioche.

PARI Pasticceria has opened in Sydney’s inner-west, transporting food-lovers to Southern Italy with its authentic Sicilian desserts.
Located in Concord, PARI Pasticceria serves traditional pastries, house-made granita and fresh Brioche baked twice a day, alongside Vittoria coffee.The patisserie is the third venture for chef Paolo Gatto and his wife Rita.

Bianca: We had been following Pari Pasticceria’s development for a few months once we saw the Oliver Brown sign come down late last year. Any new opening on Concord’s main strip Majors Bay Road is met with some fanfare, the locals can be both your champions and harshest critics. Concord’s demographic is fairly mixed but there is still a strong vibrant Italian community
